Vegetarian (Optional) Stir-Fried Noodles with Peanut Sauce

Ingredients:

For the Stir-Fry:

  • 8 oz (225g) rice noodles or spaghetti
  • 2 tbsp vegetable oil (or sesame oil for extra flavor)
  • 1 red bell pepper, thinly sliced
  • 1 medium carrot, julienned or thinly sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 3 cloves garlic, minced
  • 1/2 tsp ginger, grated
  • 2 green onions, sliced (plus extra for garnish)
  • NOTE: Can add any meat of your choice to the above ingredients, just pre-cook and add to cooking vegetables (Chicken, pork, steak, tofu, shrimp, ext)

For the Peanut Sauce:

  • 1/4 cup creamy peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar (or lime juice)
  • 1 tbsp hoisin sauce
  • 1 tsp sriracha or chili sauce (optional, for heat)
  • 1–2 tbsp water (to adjust consistency)

Optional Garnishes:

  • Crushed peanuts
  • Sesame seeds
  • Lime wedges

Instructions:

  1. Cook the Noodles:
    Cook the noodles according to package instructions. Drain and rinse with cold water to prevent sticking. Set aside.
  2. Make the Peanut Sauce:
    In a small bowl, whisk together the peanut butter, soy sauce, rice vinegar, hoisin sauce, sriracha (if using), and water until smooth. Adjust water for your desired sauce consistency.
  3. Stir-Fry the Vegetables:
    Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the garlic and ginger, stirring for 30 seconds until fragrant. Add the bell pepper, carrot, broccoli, and snap peas. Stir-fry for 4–5 minutes until the vegetables are tender-crisp.
  4. Combine Noodles and Sauce:
    Add the cooked noodles to the skillet with the vegetables. Pour the peanut sauce over the top and toss everything together until well coated and heated through.
  5. Serve:
    Divide the stir-fried noodles into bowls. Garnish with sliced green onions, crushed peanuts, sesame seeds, and lime wedges if desired.
