Vegetarian (Optional) Stir-Fried Noodles with Peanut Sauce

Ingredients:
For the Stir-Fry:
- 8 oz (225g) rice noodles or spaghetti
- 2 tbsp vegetable oil (or sesame oil for extra flavor)
- 1 red bell pepper, thinly sliced
- 1 medium carrot, julienned or thinly sliced
- 1 cup broccoli florets
- 1 cup snap peas
- 3 cloves garlic, minced
- 1/2 tsp ginger, grated
- 2 green onions, sliced (plus extra for garnish)
- NOTE: Can add any meat of your choice to the above ingredients, just pre-cook and add to cooking vegetables (Chicken, pork, steak, tofu, shrimp, ext)
For the Peanut Sauce:
- 1/4 cup creamy peanut butter
- 2 tbsp soy sauce
- 1 tbsp rice vinegar (or lime juice)
- 1 tbsp hoisin sauce
- 1 tsp sriracha or chili sauce (optional, for heat)
- 1–2 tbsp water (to adjust consistency)
Optional Garnishes:
- Crushed peanuts
- Sesame seeds
- Lime wedges
Instructions:

Cook the Noodles:
Cook the noodles according to package instructions. Drain and rinse with cold water to prevent sticking. Set aside. -
Make the Peanut Sauce:
In a small bowl, whisk together the peanut butter, soy sauce, rice vinegar, hoisin sauce, sriracha (if using), and water until smooth. Adjust water for your desired sauce consistency. -
Stir-Fry the Vegetables:
Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the garlic and ginger, stirring for 30 seconds until fragrant. Add the bell pepper, carrot, broccoli, and snap peas. Stir-fry for 4–5 minutes until the vegetables are tender-crisp. -
Combine Noodles and Sauce:
Add the cooked noodles to the skillet with the vegetables. Pour the peanut sauce over the top and toss everything together until well coated and heated through. -
Serve:
Divide the stir-fried noodles into bowls. Garnish with sliced green onions, crushed peanuts, sesame seeds, and lime wedges if desired.
